This Chicken Soup Recipe is perfect when you want something hot, light, and satisfying. It can be served as a starter, evening snack, or even as a light dinner. The chicken pieces make it filling, while the spices give it a warm and aromatic flavour.

Fresh Green Paste and Rich Flavour from Ghee and Whole Spices:

One of the best parts of this recipe is the fresh green paste made with coriander, green chillies, onion, ginger, garlic, and a little water. This paste gives the soup a fresh aroma and a slightly spicy taste, and you can adjust the chillies according to your preference. Ghee is used for tempering and adds a rich homemade flavour to the soup. Whole spices like cloves, black pepper, cinnamon, and bay leaves release their aroma in hot ghee, while onion, turmeric powder, and cumin powder add extra colour, warmth, and delicious flavour.

Cooking the Chicken, Adding Eggs, and Optional Capsicum:

One of the best parts of this recipe is the fresh green paste made with coriander, green chillies, onion, ginger, garlic, and a little water. This paste gives the soup a fresh aroma, vibrant colour, and a slightly spicy taste that makes the soup unique and flavourful. You can easily adjust the number of green chillies according to your spice preference. Ghee is used for tempering because it adds a rich homemade flavour and makes the soup more comforting.

Whole spices such as cloves, black pepper, cinnamon, and bay leaves release their aroma when cooked in hot ghee and create a warm, inviting base. Onion is then added and cooked until soft, followed by turmeric powder and cumin powder, which enhance both the colour and taste of the soup. These simple ingredients work together to create a delicious, aromatic, and satisfying Chicken Soup that tastes fresh and comforting in every spoonful.

Preparation Before Cooking:

First, clean the chicken pieces properly and keep them aside in a bowl. Drain extra water from the chicken so the soup does not become watery in the beginning. Then keep all the ingredients ready before starting the cooking process.

Slice one onion for the tempering. Keep ginger, garlic, coriander leaves, green chillies, bay leaves, cinnamon, cloves, black peppercorns, turmeric powder, cumin powder, salt, eggs, and ghee ready. If you are using capsicum, wash and cut it into small pieces. You can either grind capsicum with the paste or add it directly while cooking the chicken.

  9. 9

Turn off the flame and serve the Chicken Soup hot.

Aaji's Tip

Do not add too much water in the beginning. Add enough water to cook the chicken and make soup consistency. If the soup becomes too thin, let it boil for a few extra minutes after opening the cooker. Also, add the eggs slowly while stirring, so they mix nicely into the soup.

Notes
If you want a spicy soup, add 4–5 green chillies. If you want a mild soup, use only 1–2 chillies. Capsicum is optional, but it gives a nice fresh taste. You can grind it with the green paste or add it directly with the chicken.
