The paratha dough is really important. It has to be soft and smooth so it is easy to roll out. If the paratha dough is too hard it will probably crack when you try to put the stuffing in.. If it is too soft or sticky it is hard to roll.

To make a paratha dough you need to use wheat flour and water. You have to knead the paratha dough well and then let it sit for a little while. Letting the paratha dough rest makes it smoother and easier to work with. The paratha dough being soft also helps the paratha cook the way and it tastes better.

Making the Potato Filling

The potato filling needs to be smooth but it should not be watery. You have to boil the potatoes until they’re soft then you have to peel them and mash the potatoes properly. The potatoes should be mashed well so that there are no big pieces of potato left because these big potato pieces can tear the dough when you are rolling it.

The green chilli adds a bit of heat to the potato filling the coriander makes the potato filling fresh the salt helps to balance the flavour of the potato filling and the red chilli powder gives the potato filling colour and makes it spicy. You have to mix all these things really well so that the flavour of the potato filling is even all, over the stuffing. The potato filling should be dry so that it can hold its shape when you are handling the potato filling.

Rolling Without Breaking

When you make paratha it can tear if the dough or the filling is not done right. So you have to put the stuffing in the middle of the stuffed paratha then you have to close the dough from all sides. You should sprinkle a flour on the stuffed paratha and roll it gently.

You should not push hard on the stuffed paratha while you are rolling it. You have to use a touch and roll the stuffed paratha slowly so the filling, inside the stuffed paratha spreads out evenly. If some of the filling comes out of the stuffed paratha you should sprinkle some flour on it. Keep rolling the stuffed paratha gently. The you make stuffed paratha, the easier it is to roll the stuffed paratha.

    Add wheat flour to a bowl. Add water slowly and knead into a soft dough. Cover and keep it aside for a few minutes.

    Mash the boiled potatoes in a bowl. Add green chilli, coriander leaves, salt, and red chilli powder. Mix well.

    Take a small dough ball and flatten it slightly. Add the potato mixture in the centre and seal it properly.

    Dust with flour and roll gently into a round paratha. Do not press too hard.

Do not make the potato filling wet. If it is too wet the paratha might tear when you roll it. Roll it gently every time. Cook it on a flame. This way the paratha will become golden on the outside and soft on the inside. The potato filling and paratha are very important. You have to take care of the potato filling and paratha both.

Notes
When the dough feels hard you should add a water and then knead the dough again. If the stuffing feels too soft you need to let the stuffing cool properly before you fill it. The best way to have this is to serve the dish hot with some curd, for the best taste of the dish.
